Catalan chicken with plums and pine nuts

Serves: 4
Ingredients:
- 1 free range organic chicken, cut in octaves.
- 20 dried plums
- 1 Spanish onion
- 3 Spanish tomatoes
- 1 garlic head
- 50gr. pine nuts
- chicken stock
- 1 glass of mellow wine
- olive oil, salt, pepper
Preparation:
- Leave the dry plums in water while you prepare the recipe.
- Cut and season the chicken and pan fry it with the garlic.
- When the chicken is almost cooked, throw in the onion and tomatoes.
- Add the plums (and the water!), salt, pepper and the wine.
- Add the chicken stock and leave it cooking with low fire for 15 minutes.
- Add the pine nuts, let it rest for 5 minutes and...
- Bon profit!
Tips: Cook it "al xup-xup" (as we say in Catalan), with very low fire and make it with lots of love!
Story of the recipe: This recipe is very typical in many catalan households. In Cal Marxandó, we have been serving it for 160 years and still now people come to Sant Jaume de Frontanyà from all over the world to taste this catalan traditional dish.
